I'm down to my last 15 bottles of the 888 RIS. I should have brewed this up 3-4 months ago, but a 1.090 RIS brewing in July/August just wasn’t an appealing idea. Plus, I was busy brewing back to back session beers for events.
I want this RIS to be silky smooth and texture rich. My mash tun was chalk full and this was a thick mash.
We’ll go:
One month primary at 67 degrees.
One month secondary at 67 degrees.
Three months in a keg in the 45 degree garage.
Carb it, bottle it and store for next year.
I think I shall sneak a “peek” sometime in April.
