I have some Simcoe and Cascade hops in my freezer. I want to make a beer but I am not sure if I should make an IPA OR bitter. Maybe even a plain old pale ale. I want this beer to be ready for Labor Day. I also have access to fresh Hallertauer, Nugget and Tettnenger hops too.

What kind would you make with these hops? :drunk:

For Labor Day, expected to be warm / hot, why not go for a simple SMaSH with one of the hops or a simple refreshing ale. Simcoe or Cascade would be tasty

Sounds like the makings of a good American IPA or American Pale. Pick your bitterness level and and get to boiling :) . -- Simcoe early and cascade late if you are looking at the IPA, maybe just flip those additions for the Pale ale.

2 Hop variety pod casts I came across in the Basic Brewing Archives recently:
