I have been using 1028 London Ale for my porters with good success. This weekend I made a very strong (OG 1.100) porter and not thinking I pitched the yeast as normal.
After looking at the website, it looks like the 1028 is good to 10 % ABV.
Question is what is going to happen ? Will the yeast die before fermenting all the way ? Should I pitch more or a different strain ?
