Hi All,

I have some extra ingredients arounf that I want to use up and I was hoping to get some help with building into a good beer.

1) I am an extract brewer
2) looking for a medium-high ABV
3) I have:
~ 3 pounds of honey
~ 2oz apricot flavoring (austin brew store)
~ 2oz whole centenial hops
~ 1oz fuggle pellets
4) I know I will have to buy some more stuff... Can anyone help me to build or find a recipe using the above on hand ingredients? or at least most of them?

Thanks!

I appreciate the sharing of skills you all give.

I'll take the first shot to get the ball rolling:

I think the issue is, do you want to combine the honey and apricot in one beer? I can see honey going with Fuggles in a Honey Brown or Honey Mild or something. But maybe you just go for an Apricot Honey Ale:

6 lbs wheat LME (?)
1.5 lbs. honey
2 oz. apricot flavoring at bottling
1/2 oz. Centennial for bittering (or just aim for 15-20 IBU)
Am wheat yeast

If you add the honey late in the process, you'll preserve its flavor. Or you could just add it to the boil for gravity, and then reduce the extract.

I like the idea of a apricot honey ale.
what about 1.5 lb at boil and 1.5 at flame out?

I would love to see some other ideas on this
