Is there any way beside taste to tell if your beer has finished carbing or if there is even a "finished" carbing?
Is carbonation done?

Not when it's in the bottle- the only way to know then is time and tasting.
What I used to do, though, is fill a couple of plastic bottles when I bottled my beer. I used PET bottles, from a brew store, but soda bottles would work too. Put those with the glass bottles, and when the plastic bottle gets rock hard, that's a good sign that they are all carbonated.
