Hi there, I've got what I think is a good grain bill for a Rye IPA that I'll be brewing this weekend, but need some help with hopping with the hops I've got in the freezer. Here's the grainbill:

10 Lb MO
2 lb Vienna
2 lb Rye
.75 lb Crystal 60
.5 lb flaked barley

Planning on mashing around 150, to get high attenuation.

Critiques on the grainbill are welcome (needed probably) as well. It's a combo of the Denny Conn and Edwort recipes.

Hops available are:

1.5 oz Amarillo
1.75 oz Simcoe
.75 oz Cascade
2.0 oz Centennial
1.5 oz Summit

I'm cool with using all of these (i'd imagine that'd be IBU over 100). It seems that a lot of the recipes I've seen tend toward the "spicier" hops instead of using a lot of the citrusy "C" hops. So in my mind that means starting with either Simcoe or Summit and adding things like Centennial and Amarillo later (or dry hopping with them). Is this true or am i just smokin something?

Thanks a ton for your help.

mix 'em all up together, and divide into 6 equal portions.

1 part at 20 mins
1 part at 5 mins
2 part at flameout (let steep for 20 mins before chilling)
2 parts dry.

the grainbill looks fine, but depends on if you want a hop monster or an american ipa or what. we all have our tastes, but i'd go with 1 oz of summit at 60, 1 oz of simcoe at 30, 1 oz of centennial at 5, and dryhop with 1 oz of whichever is your favorite hops (me, i'd go with the .75 cascade to give it a little twang - i'm from texas; i like the twang :) ). depending on aa, that should put it between 80 and 90 ibu.

You want the Rye to be heard, so I'd go with only two hops. Bitter and aroma/flavor. Summit/Centennial would be what I'd lean to.

btw - Denny's is a favorite of mine as well as most everyone who has it.

I agree with not getting too complicated - you don't want to lose the rye. Rye is spicy, so that makes me lean towards the piney flavors of Simcoe, but I feel like Simcoe always needs something softer to back it up so I'd use some Centennial too.

I also like Centennial for 30-10 min hops and Amarillo for 10-dry hops. Centennial is so cooling and rich tasting for flavor and Amarillo has that citrus punch in the nose.

*1 - I love the brew.

I forgot that Mt. Hood is in Denny's recipe. I also have 3.5 oz of Liberty sitting around that I didn't even think about. Would that be a good aroma addition with maybe Summit for bittering? I hear really great things about the Simcoe/Centennial combo, maybe just for dry hop?

1.0 oz Liberty FWH (11.2 IBU)
.75 oz Summit @ 60 minutes (39.3 IBU)
.75 oz Liberty @ 30 minutes (6.4 IBU)
1.5 oz Liberty @ 5 minutes (3.3 IBU)
1.0 oz Centennial Dry hop (0 IBU)
.5 oz Simcoe Dry hop (0 IBU)

gives a total of 61 IBU, which seems right on.
