So, I'm thinking about brewing up an imperial witbier, which I have seen a few people on here brew before. To me, it almost seems like an oxymoron with regard to conditioning... wheat beers are general best young do to a variety of reasons. However, an 8-9% beer typically takes a couple of months to mellow out a bit.
Does anyone have any experience with this? Does one positive outweigh the other in your opinion? I imagine it's not a style that can get away without at least a little compromise somewhere...
ohiobrewtus had brewed up a version that seemed to go over very well.. I'm not sure how long it conditioned before being tasted though.
