I've just bought one and I wonder how to salcage from it ? Do I pour some sugar and water in the yeast bed ?

Instead of culturing it from the bottle, you can see if you can find any Wyeast Canadian Belgian (3864) left on the shelves. It was one of the private collection yeasts this summer and is rumored to be Unibroue's strain. Since it's probably getting a bit older, you'll need to make a healthy starter to build it up.

I made a tripel with it shortly after the yeast was released and it tasted very much like La Fin du Monde.

Good luck :)
