I don't have any dme in the house for my next brew. I do have some leftover brewing sugar from a cooper's extract kit. Would this work for my yeast starter or would it cause some off-flavors?

I'd tend towards no.

The yeast will get in there, multiply and ferment. But it will select for yeast cells that are happier in pure, 100% fermentable sugar solutions, and might not be as comfortable in proper wort.

I'd use malt extract and leave it at that.

ok, thanks for the help! I'll have to make the trek out to the LHBS. Convenience is not worth ruining my beer
