 Out here in the homebrew wilderness of Thailand I have found a place selling malted wheat flakes and was wondering if I can use them to make a wheat beer.
Can they be used to brew with? I was thinking of doing an all wheat American ale. This product is ,in comparrison to buying sprouted wheat,VERY CHEAP and doesn't need drying.:D
So,as usual, all input will be received with thanks.
Cheers,Lee.

I was thinking yes. Iwant to try an all wheat (BIAB) hopped with Sorachi Ace,which I have a few oz of in my freezer and can't wait to use!

be careful with sorachi ace. let ms say, they are quite pungent. that said, I was also very excited to try them out, too... turns out they are not the citrus profile I look for. SA still makes good beer. let us know how the wheat with sorachi works out.

Sweet,cheers!
What about mash times and temperatures?
Do I need a protein rest?

So,the wheat was bought, and malted at home, then dried in the 35degree sun for two days.
plan is mash at 67degrees for an hour and mash out at 75 for 15 mins.
Add 5gr Sorachi Ace @ 60 and then another 30gr over the last 15 minutes.
Ferment at about 22-23 degrees with Saf WB-06.

Is that the only grain in the bill? I didn't think a grain bill with over 50% wheat was a good idea. I am really interested in how this turns out.

Well,doing a traditional AG brew,it wouldn't be the best idea.But I am going BIAB,so it shouldn't be a problem.

It's done and in the FV!
I got quite a low OG,only 1025 and am a little disapointed with that.
But it smells great and the fermentation started great.
Fingers crossed.

What OG did you get from yours?

mine used wheat malt instead of flakes.. plus I did a BIAB with decoction.
batch size 5.5 gallons boil for 90 mins
9lbs German wheat malt
1 oz Saaz (3.2 AAU) for 90 min
Whitelabs Hefeweizen yeast

I hit 80% efficiency and had 1.051 OG.

Step Time Name Description Step Temp
35 min Protein Rest Add 8.00 gal of water at 124.6 F 122.0 F
45 min Saccharification Decoct 3.19 gal of mash and boil it 155.0 F
10 min Mash Out Heat to 168.0 F over 10 min 168.0 F
