I transferred my wine to the secondary last Friday when the SG was at 1.000. My instructions said to move it when it was at or below 1.010. The next step said to wait 10 days and check the SG. If it is at or below .998 (or .996, can't remember) then add the next set of chemicals.

My question is, since I moved to secondary much lower than the 1.010 that I could have, do I need to wait the 10 days or simply check the SG for stabilization over consecutive days at the recommended SG?

if the SG is no longer changing. It's done and ready for the next step
