So after the shambles that was my first AG, and a very nice cider, I decided to go with an extract brew for my second beer.

Going for an English Old Ale/ Bitter style here

1 Gallon Batch

2 lb Light DME
2 oz Honey Malt
2 oz Carmel 60
.33 oz Sterling pellet hops (6.0 AA)
Process

Steeped the Grains at 155 for 30 minutes (Mostly for Body and Color)
Added DME and Brought to boil after removing grain pouch
Added hops and Boiled for 60 min

After cooling added 1 pkg muntons dry ale yeast.

It's bubbling away now. Pics to follow

Beer Calculus says

og 1.097 (actually 1.102)
should finish at 1.020 (9.5%)
39.7 IBU

Wort tastes great.
 
Well you probably used too much extract for a 1 gallon batch. Your OG of 1.102 OG is significantly above what's typical for an Old Ale (usually 1.060-1.090).

Depending on how through your fermentation goes you'll quite possibly end up with something closer to a barely-wine than an Old Ale.

As a final note: Honey malt is one of my all-time favorite grains :D
 
Deffinately a barley wine. Fg 1.030 (11.3 abv) primed with 1 oz simple syurp, and after 24 hrs my pet bottles are rock hard. Green beer tasted tremendous. Malty, but with just enough hops to let you know its there. Slight note of citrus and banana, (not sure if hops, or yeasts did that. No off flavor). By next Tuesday it'll be ready to consume.
