Before anyone gets all crazy- I know that a true gimlet requires hard liquor and we aren't supposed to talk about that here.
Keeping that in mind, I'm wondering if anyone has ever attempted to make some sort of home brew "lime wine" that might taste something like a gimlet? It seems like using lime juice, lime zest, sugar, and water could theoretically make something that would taste similar to a gimlet. I lack the expertise to to decide things like proportions of ingredients and the correct strain of yeast but I'm sure I'm not the first person to have this idea. Has anyone ever tried something similar with good results?
