I'm preparing to bottle. I typically keg, but I decided I want to bottle this batch. However, the directions for this particular batch led to a secondary temp of about 45 degrees. So my beer is awfully cold compared to what I have ever bottled in the past.

I believe I will need to condition the beer at closer to room temp or the final fermentation won't go.

So should I let the beer come up to higher temp (like 68) before bottling ot go ahead and bottle, then let it come to temp?

Or does it even matter?

Ive heard of people pitching under temp, and letting it raise up to the ideal fermentation temp. So my 2cents is it doesnt matter.

Nothing compared to carbing it naturally with suger. RDWHAHB ;)

Thanks all.

I did as recommended.

Should be at about 70 deg. now and will let it sit for 2-3 weeks.

Tast test makes me hate to wait. It's the Bell's Two-Hearted clone and it tastes excellent. A little sweet due to the bottling sugar, but that will soon be corrected!
