So I have my hop plant coming back for year two. The are about 12 little bines coming up. As I've read here, I should let them all grow. Cut back the few that grow really fast (Bulls?). Then pick 5 (I have a five lines running up the side of my house) and train them. Cut back what ever is left.

Dose this sound about right? Or am I clueless?

Sounds good to me. Some would say keep the strongest 3, but if you've got the room, I don't see why not. Keep them fertilized (compost) and watered and they should grow like weeds.
 
I think the number of bines to train depends on the plant.

From my own experience, a young plant (up through 2nd year) probably should be kept to 2 to 3, but a big-ass 5 year old crown in a rich bed may well support up to twice that and still produce reasonably sized cones...
