Can I use Wyesast 2565 in a Centennial Blonde? I was thinking of brewing BierMuncher's recpie, but this is all the yeast I have on hand. (and its nice out, so I want to brew) :cross:

I use Kolsch yeast in a basic lawnmower beer. It's awesome. In fact, I've made the same recipe several times - with 1056, Bell's house yeast, etc. and nothing is as good as the Kolsch yeast. The website description says that it's good for "pseudo-lager" beers. I'd say that description is spot on.

And FWIW, I hit my Kolsch lawnmower beer with gelatin and it's crystal-clear in 24 hours. Cheers!

Know what else, I've tried my kolsch lawnmower at two weeks in the bottle and again at 4, 6, etc. While i give most beers 6-8 weeks in the bottles, I can say this one is ready for drinking at two weeks. It's awesome.
