I brewed a Belgian Ale 5 days ago and used WLP500 Trappist yeast. Day one had some airlock activity and by day 4 nothing. Stupid me didn't check it in between. Is this normal for this yeast? I pitched 2 vials in a 10 gallon batch. I was expecting a pretty active fermentation. Should I pitch some more yeast, and if so, can I use something different to clean it up to ensure an active fermentation?
Took a gravity reading with refractometer and used online calculator to convert to FG and here is what I have which is surprising:
OG: 14
FG: 7
FG after conversion: 1.009615226
That can't be right, can it? 6 days down to 1.009?
