Is Pilsner and Pilsen malt the same thing?

Flavor-wise, what is the difference between the different Pilsen/Pilsner malts (German, Belgian, Canadian)?

Pretty much all malts taste different. Even american 2-row tastes different from different maltsters.
If you have a LHBS, the best thing you can do is to go in and lift the bin lids, smell the grain, chomp on a few pieces--it will give you a good idea of what the differences are.
You will be suprised at just how different they all are.

Pilsner is a highly-modified malt, Pilsen less so. Pilsen benefits from decoction mashing and gives you more control over the final results.
