Hey Guys I forgot to get some gypsum at the HBS this week and they are closed today. My tap pH is 7.0. How will it affect my brew. I want to brew real early tomorrow.
My options:
Brew a porter and don't worry about it.
OR
wait for the store to open and brew an ESB.
I figure the porter flavor can compensate for the higher pH. Will the ESB be seriously affected??

If I can remember, during the mash the enzymes will bring your ph hopefully down into the optimum range of 5.4
I actually think that both brews on here will be fine. Many people make great beer without any water additions.
 
the ph of neutral water is 7. Don't worry about adding it. I have very soft water and i never use gypsum.
