We're making a sweet honey wheat beer, that will be very aromatic as we are using rose petals and elderflower.

We're trying to make it a very light summery beer.

Any suggestions of what hops would be good to use, we dont want it too bitter or harsh, but we dont want it to sweet, or for the smell to be dominated by the hops.

cheers.

I think you could go two ways with this. One would be a noble hop, like hallertauer, for bittering. That would be a "clean" taste, almost without hops flavor. Or you could go with something fruity, like Sorachi Ace, to get a lemon flavor in the beer.

For bittering hops, it probably doesn't matter that much as long as you use a fairly neutral hop variety and one that isn't harsh tasting.
