Timely post, as I was just thinking of simplifying my brewing to just a few beers that I tend to like:

Classic American Pilsner (second up: Bohemian Pilsner)
American IPA (second up: American Pale Ale)
Hefeweizen
 
I can't do it. I can't pick only 3. It depends on the time of year and how my tastebuds are (or are not) working really.

In all honesty, let me get this first batch bottled and tasted (and my second finally brewed) and I may come back to this question later. :)

Blackberry Flanders Red (Based on Jamil’s recipe, aged for a year followed by 4 months on 2 lbs of fruit per gallon)

Pliny the Elder Clone (ramped up to 1.100)

Hefeweizen (50/50 wheat/pils, decocted, fermented at 58 ambient)
