Im going to do my first Hefe this weekend, ive got a 9 gal SS brew pot, a 6.5 glass carboy, a homemade CF chiller as my primary Equipment.

So my recipe is going to be a mini mash full 5-6 gal boil.

recipe goes

1-2 gal steep (90 min) @ 150° of
4oz Belgian aromatic malt
2oz acid malt
2 lb German wheat malt
10 0z German Pilsner malt
1/2 lb rice hulls

sparge 1 gal over above ingredients @ 160°

fill to 6 gal ????

add 4 lb wheat DME
2oz malto dex
1oz german hallertau Hersbrucker (bittering)
boil for 45 min

1/4 oz spalt (flavor)
1/4 perle (flavor)
boil 15 min

gravity feed through my counter flow chiller to my 6.5 gal carboy???

Hopefully temp is ~70°
pinch White labs WLP-320 American hefe yeast (going to make a starter)

ferment 7 days thinking in the ~60 deg range??

rack to secondary and leave for ~3 weeks?

How does all of this sound to you guys....any advice???

You're not going to need anywhere near 1/2 lb of rice hulls with a 3lb grainbill. I used less than that with 11lb.
