A Dunkel for critique, prior to brew day

I've got a few batches under my belt but would like a little feedback on this prior to brew day:

9.5 Lbs white wheat malt
.5 lbs roasted wheat

.75 Hallertauer @ 60
.25 Hallertauer @ 5

Safbrew WB-06

Mash at 152 for 60 minutes, Sparge to 7 gallons, preboil SG 1.049

I'm still up in the air on getting all the dunkel from roasted wheat; would crystal, amber or some combination be better?

Like this:
.5 lbs Amber
2 lbs Crystal 80L
7.5 lbs White Wheat

Oh well, brew day is tomorrow and Fairbanks is out of white wheat malt, oh well, this will be an empty-the-closet dunkelweizen:

4 oz Amber Malt
1 lbs 2-row
1 lbs 12 oz white wheat malt
5 lbs Belgium wheat malt
2 lbs crystal 80L

1 oz Hallertauer 60 minutes
1 oz Hallertauer 5 minutes

It's just over 50% wheat so that'll keep me in a wheat beer state of mind. I didn't really want to use 2 lbs of crystal (around 20% of bill) but that's what I got, on-hand, and, according to Beersmith, it's within the standard color and ABV. Additional hops added to *hopefully* balance out the sweetness. Wish me luck.

Now, all I have left in my closet is 4 lbs of crystal 80.
