I've always used lids in my brewing practices for no reason other than to cover the pots. I have seen that a lot of people forgo this. How necessary are lids?

Definitely not during the boil, but use them during initial heating to minimize heat loss on HLT, MLT, BK. Also for storage to keep vermin out, i found some rat droppings on the lids last week.

When doing small batches on the stove-top I'll leave the lids on while it takes it sweet time heating up. Once hotbreak gets close I'll take the lid off, then once it's under control I leave the lid on half-way to keep it a rolling boil but off enough to let DMS escape.
