Sparkling Ale (Sam Adam's Clone Attempt #1)

- 4 lbs 6.6 oz Pale Malt (2 Row) UK
- 4 lbs 6.6 oz Pale Malt (2 Row) US
- 12.9 oz Caramalt (Simpsons)
- 4.3 oz Caramel/Crystal Malt - 60L

- 0.52 oz Hallertauer Mittelfrueh (First Wort)
- 1.0 oz Tettnang (30 min)
- 1.0 oz Spalt Spalter (5 min)

YEAST
White Labs WLP008 - East Coast Ale (I used 1L starter)
 
How does it taste?


The sample I tasted while racking to keg had a good flavor but was a bit mild. I think it would have been much better if I had hit my OG target. Looking forward to tasting it after it carbs up.
 
Yes, sorry i didn't respond with an update. Foam settled down. In fact, I wish there was just a bit more. The bubbles in the head are larger on average than I think they should be.

Purging the C02 a few times did the trick.

I also changed my keezer temp to 40F and upped the C02 pressure to ~13.5 for a carb volume of 2.6.

I'm open for suggestions.

It tastes good. My wife and daughter commented that it tastes good but seems like there should be a little more "flavor". I agree and I think this is from my target OG being a little low.

I don't have a Sam Adams "Sparkling Ale" to compare it to. I do think it's worth improving upon.
