The instructions on my beer kit say that after a couple of days in the bottle at around 20°C to move to 10°C for a week or two. How important is it to do this? I don't really have anywhere this cold - I could leave it outside I guess but there the temperature swings from almost freezing to about 10°C during the day at the moment. Will it age just as well at room temperature or should I maybe consider picking up a cheap secondhand fridge off eBay?

you mean after fermentation? when there bottled?

usually for carbonation 2-3 weeks at 20 degrees is required - 2 days seems too early to me.
cold conditioning after carbonation will benefit most beers.

hmm, id listen to rod, but iv always left it outside in the cold after 5 days of conditioning

i could easily be wrong tho!
