I made my first batch of hard cider last year and loved how it turned out. I want to step up my cider making and try making a bunch of different varieties with different apples, yeasts, and aging techniques. But first things first, I need to get the apples and juice.
Can anyone recommend a good book or online resource that lists cider apples and their characteristics similar to the resources you can find online about grains and hops? I've found the following books online: Cider:Making, Using & Enjoying Sweet & Hard Cider; and Cider, Hard and Sweet: History, Traditions, and Making Your Own. I almost got the latter, but there are some mixed reviews.
Thanks!
