I have a dunkelweizen which has been fermenting with SAF-06 since Mar. 5th. The temp on the ground floor is currently 77F. It is on the floor and is at about 75 according to the fermometer. No activity on the air lock. Bottle now to avoid higher temps of wait it out for further aging?

Once fermentation is over, the ambient temp doesn't matter nearly as much. I have to tell you that I'm not a fan of wb-06 but good luck to you. 10 days is OK for a primary, but I'd suggest letting it sit around for another week or so before bottling. More stuff will drop out.
