I'm brewing a honey cinnamon porter this weekend. I got the recipe from one of the holiday recipe sites on here and it calls for a 90 minute mash at 158. Here's the recipe:

9.5 lbs Pale malt (2-row)
.75 lbs Honey malt
.50 lbs Caramel/Crystal 60L
.50 lbs Chocolate malt
.25 lbs Special B
.20 lbs Black (Patent)
1lb Honey (added at last 5 minutes)

1 oz Centennial (60 min)
.50 oz Williamette (15 min)
.50 oz Williamette (5 min)
.20 oz cinnamon stick (5 min)

90 min mash at 158

I'll be using washed S-05 yeast in a starter

Is the 90 minute mash necessary? Is the mash temp too high for a 90 minute mash?

If it is an old recipe I would understand the 90 min mash for conversion in the old days the grains had a hard time converting it took a long time but the grains today convert between 30-60min so 90 I wouldnt think is necessary the higher the temp the lower the alcohol so if it is a lower final gravity that would make since

I got this recipe off a post from last year, so not that old. BeerSmith is calling for an OG of 1.063 and final at 1.016. If I do a single infusion, light body, no mashout BeerSmith calls for a 75 minute mash. I never know what mash profile to put in this section of the program. Any suggestions?

The temp isn't too high for the style but the 90 minute mash is probably not necessary. Your mash should be converted long before then. I'd probably stick with 60.
