Hello all,
I tried looking up some recipes for a spiced christmas ale that I want to brew in the next few days. I know its a bit late but wanted to do it anyways. I searched (using search!) a bit and found this good link https://www.homebrewtalk.com/f12/whos-thinking-about-their-christmas-brew-already-74020/ but they were from last year (not that that is bad). Unfortunately, I cant search by date to find anything recent and I went back about 15 pages looking.

Anyone want to post their Christmas ale recipes for this year (or successful last years?). I only recently got into All Grain and had pretty low efficiency (60ish) probably because of grain crush. Something big like a christmas ale I might do part extract to just help it along. Also I want to make a full 5 gallon batch and my current stove barely can boil 3 gallons so thats more conducive to part extract.

Spiced Holiday Ale...

Tis awesome, plenty of time to brew it... done this one for a couple years.

PULLDOWNS ARENT WORKING:
Recipe Type: All Grain
Yeast: S-04
Yeast Starter: YES
Batch Size (Gallons): 5.3
Original Gravity: 1.061
Final Gravity: 1.016
IBU: 31.5
Boiling Time (Minutes): 90
Color: 17.3SRM
Primary Fermentation (# of Days & Temp): 14
Additional Fermentation: 60 Aging
Secondary Fermentation (# of Days & Temp): 14
Tasting Notes: Malty, well balanced with the spices, great for a holiday grog!

10Lbs American 2-Row
8oz. Crystal 120L
8oz. Caravienne
4oz. Honey Malt
2oz. Black Roast Barley
2oz. Special B


1oz Glacier @ 60min.
1oz. Willamette @ 1min.

1 tsp Ginger @ 3 min.
1 tsp All-Spice @ 3 min.
2 tsp Cinnamon @ 3 min.

Whirflock @ 5 min.

Mash @ 155F for 60 min.
Ferment @ 66F for 14 days Safale S-04
Secondary @ 66F for 14 days
Keg Age @ 66@ for 60 days.

OG 1.061
FG ~1.016
ABV 5.8%
SRM 17.3
IBUs 31.5
 
I'm thinking about making my first Christmas ale this year (extract). This recipe looks good. Curious - what is driving the choice of hops on this? I saw midwest sells a kit that uses Vanguard bittering and Cascade as aroma.

Also, anyone willing to give me a good extract version of this?
