Hey, I have a bunch of wlp500 to use soon and I thought I'd try my hand at a Belgian stout. I had Allagash Black and enjoyed it, but I think you could make a much better one.

Here's what I was thinking:

10 lbs belgian pilsener
.5 lb special B
.5 lb 350 srm chocolate malt
.5 lb roasted barley
.5 lb dark candi sugar

I can't really think which hops to use.

Any suggestions?
 
Could recipe for sure, nice and basic. Personally, I would use any good bittering hop at 90 and a spicy/earthy hop for finnishing. My default finishing hop for beer where I want subtle earthy/spicy/citrus notes is willamete...cheap and available.
 
I used a similar recipe and shot for 1.100 OG. It's been in the bottle for about a week but it's already showing promise. I was aiming for 'chocolate covered fruit' and totally hit the nail on the head. I used EKGs for the hops FYI. Go for it!
 
I would go willamette, EKG or Fuggle for finishing. I like High alphas for bittering on stouts. Because you are adding a very small amout of hops to get your bittering balance you also cut down on hop sediment and I think it leaves it very clean tasting

I was thinking maybe 2 oz of EKG @ 60? That would give me around 30 IBUs. I could also throw some hallertauer or saaz in at flameout to Belgian it up a little more. Not really sure how hoppy I should make this beer.

2 lbs. American 2-row
1 lbs. Crystal Malt 60°L
.5 lbs. American Black Patent
.5 lbs. American Chocolate Malt
.5 lbs. Black Roasted Barley
5 lbs. Dry Light Extract
1 lbs. Wheat Flaked
1 lbs. Oats Flaked
1 lbs. Candi Sugar Amber
1 oz. Amarillo (Pellets, 9.1 %AA) boiled 60 min.
.5 oz. Fuggle (Pellets, 4.0 %AA) boiled 60 min.
.5 oz. Fuggle (Pellets, 4.0 %AA) boiled 15 min.
1 tbsp. Yeast Nutrient (AKA Fermax) (not included in calculations)
Yeast : White Labs WLP550 Belgian Ale info
