Hi everyone!
I'm hoping to making a pretty simple Simcoe Lager then bottle condition with a brett/lambic blend of yeast (Wyeast 5526?). I've never use brett yeast before, would this be possible?
What is the fermentation profile of brett? I.e. temp/aging etc.
Any help appreciated!
