I brewed a Pale ale that came out as 1.047 OG, a lot less than the 1.068 I had aimed for... due to me still tweaking my mash, but that's another story. On top of this, I aggressively hopped the brew, with:
1 oz magnum at 60
.5 oz Galaxy at 25
.5 oz Galaxy at 15
.5 oz Galaxy at 10
.5 oz Galaxy at 5
1 oz Galaxy at Flameout

After 9 days in the primary, I'm at 1.012, and the beer smells great and has a really nice flavor. However, I feel like I could have cut the bittering hops in half. I know that over time they will mellow some, but I don't want to lose the flavor or aroma. What would you guys do to modify this beer?

In theory, you could make a sweeter beer to blend with this one, but if it smells great and already has a really nice flavor.. maybe ride it out?

Yea, I'm thinking I will let it sit for a while to see if it mellows the bitterness, but I don't want to lose anything else. Maybe dry hop at some point?
