I bottled my first batch one week ago "American Amber" made from a kit. I had to open one and taste it today...couldn't wait. Nice head when poured into glass but the first taste was kind of sour-not pucker your mouth sour but it was detectable. Will it improve with age or is it infected?

By the end of the bottle it wasn't as noticable but I decided not to sample anymore today.

only open one per week until they taste great. the beer is still green...it will improve vastly over time. you should wait at least 3 weeks before you really start to kill them. i try to wait 6 whenever i can be patient enough.
