Pretty sure I'm just paranoid since a few brews ago I 'caught something'. I wanted expert opinion. See attached pictures....do I have another infection?

I brewed a kit from Midwest called Java Stout but modified slightly. I added 1lb of sugar, 8oz of maltodextrin with other fermentables and 10oz of unsweet cocoa powder at 1st hops.

This is my first Stout. I've checked gravity the last 2 days and it's stayed constant (been in primary 1 week). When checking gravity, I noticed this stuff is super 'thick'....it's pretty slow/thick coming off the hydrometer. I'm guessing that's the maltodextrin?

Heck I'm here...one more question....
I'm adding coffee and 4 vanilla beans to secondary.
1. Cut and brew beans with coffee or...
2. Soak cut vanilla beans in whiskey then add to secondary?? :mug:
