I have a couple of batches currently aging happily. Closet temp has been a fairly consistent 73-76 degrees. However, we've now hit the Southern California summer which runs through Sept and Oct and I'll be pushing 80, perhaps 82 but don't think so.
I've read through a number of posts that indicate that post bottling temps are not so critical, still the recommendation is typically below 74. My question is what the negative effects might be at 80 for awhile. Does it warrant filling a big tub with water, submersing all of the bottles and controlling with frozen water bottles?
Or just RDWHAHB.
FYI - batches are a Double IPA, an American Red and I'm bottling a 3rd batch tonight - imperial stout.
