Champagne Beer Recipe

Hi,

I'm rather new to homebrewing and I'm having difficulty locating a Champagne Beer recipe and mash schedule similar to Deus or Malheur type Champagne beers.

I do have the equipment and facilities to produce Champagne including degorging machines and corkers etc... I'm just not sure on what type of beer I should be making and the ingredients.

Any help with regards to making beer using Champagne methods would be greatly appreciated.

Hey sorry, I think I spelt that wrong, it should be disgorging. It's the process of shooting out the sediment from the top of the champagne bottle after riddling (http://www.cyder.com/images/pupitre during disgorging.jpg). You riddle the bottle to get the sediment into the neck by slowly turning it once a day for a couple of weeks. Thats a riddling rack that you use to do it in.

I have a machine a little more advanced than this one (http://4.bp.blogspot.com/_rb5K4w16AnE/SH5DUumJZdI/AAAAAAAAAl0/4tTevM84HkY/s400/gosset-jeros1.jpg) but something similar.

It basically lies the bottle on its side and lifts it quickly to pop off the bottle top and shoot out any sediment with the pressure in the bottle. Some people freeze the top to make it easy and so the sediment doesn't run back into the bottle when it's lifted in the machine.


I know the champagne beer methode is very similar and they use both these processes to get the sediment from the fermentation out the bottle so I'm very interested to try it seeing as I have all the equipment already :mug:
