I made six gallons of California merlot this year and was wondering how much oak to use and how long to leave it for. I bought a pound of French medium toast figuring it would last a while. Thanks in advance
 
I use an ounce of chips in 5 gallons, usually for about 3 weeks or so. You can always add more if you taste it and it's not enough.

When you bottle, you want it just a bit "overoaked", as it will fade a bit with some aging. If it's too much, though, it'll take years to age out.
