In the process of building my temp controller/keezer. I've been carving an Irish draught ale for a week at 12psi at 65 degrees. Carb tables put this at the 1.5-1.6 range when complete. It won't be close to there for another week at least.

Can I carb it at 30psi for a few days at that temp then when its carbed, drop the pressure to 12 and drop the temp to 40-45? Or will this result in overcarbing?
