Any one ever use lychee in a recipe? I've had it in Pom juice before and as a gummy snack. It's an interesting tasting Asian fruit that I think would lend well to a wheat, but I wouldn't know how to use it unless I bought an expensive purée over the Internet.
 
This sounds very interesting to me. It is a subtle and clean flavor. I think out would go awesome in a witbeer.

I make Korean makgeolli (rice wine) as well as beer. I might use it in that.
 
Maybe even try rambutan too. Definitely something you'd want to use at the very end of the process (perhaps best to keg carbonate first, then add fruit) to avoid losing any of the subleties of the fruit.
