Howdy,
I found a delicious sounding brew recipe on BeerMapping and have converted it to 2.5 gal to see if this is worth doing a 5gal (along with some recommendations from my LHBS) and just have a couple questions --

Honey Vanilla Cream Ale (2.5gal)

* OG: 1.050 (@ 60°F)
* FG: 1.013 (@ 60°F)
* IBU: 21
* ABV: 4.8%

* 0.50 lbs Pale Malt
* 0.25 lbs CaraPils Malt
* 0.25 lbs Wheat Malt
* 0.125 lbs Honey Malt

* 2lbs Pale Malt Extract
* 0.375 lbs clover honey
* 0.25 lbs corn sugar
* 1oz raw sugar

* 45 mins 0.25oz cascade hops
* 20 mins 0.25oz willamette hops
* 00 mins 0.25oz saaz hops

* SafAle US-05 Dry Yeast


* 1 teaspoon vanilla extract


* Add Clover Honey and Raw Sugar at end of boil.
* Add Saaz hops at the end of boil for aroma.
* Add Vanilla extract into secondary fermentation.


Since I did not find any instructions with the recipe my questions would be in my brew process -- does this sound right?

Put all grains into brew bag -- Steep @ 150 degrees for 30 mins
Remove from heat, add DME
Boil 60 mins add hops time variables

I've got a large SS brew pot that I can do nearly a full volume boil but will probably only do around 1.5-2gal for boil over space. How's this sound?
