Does anyone have a formula to tell you how much added utilization you get from doing a late-extract addition and a full boil?
 
One of the cool things with Beertoolspro (not sure if others do this) but you can add an ingredient line item and "uncheck" it from inclusion without removing it completely. For example...

X 3lbs light DME
_ 3lbs light DME

So that's like a total of 6 pounds but the IBUs that show up when half of the extract has been added late will increase.
 
Check out the hop utilization chart in Papazian's TCJOHB.

He basically recommends 1 lb of malt per 1 gal of water to achieve a 1.040 gravity.

Hop utilization is really dependent upon the gravity of the boiled wort. By not having the proper gravity you can under/over hop.

It's this reason that I boil 1.5 gals (the extra .5 gal is for boil off) and only 1 lb of malt for 45 mins. Then I remove the pot from the heat and add the remaining malts and steep for 15 mins. ;)
