I've been brewing beer for about three years and decided to start a batch of mead recently.
I'm using the Chief Niwot's mead recipe as it appears in Papazian's "The Complete Joy of Homebrewing".
Unlike all of the other mead recipies in the book, there is no mention of racking to a secondary fermenter for this recipe. Can I actually "...ferment to completion, and bottle as you would beer."? It's a sparkling mead.
If I do need to rack the must, at what point do I do that? I'm assuming the mead is ready for bottling when it reaches the final gravity reading.
5 gallon batch, 13lbs clover honey, OG 1.094 @70 deg. F.
