i have found myself with a near dry pipeline and a graduation party in two weeks.

i havent brewed too many "small" or "quick" beers in a few years. im looking to brew 5/30 and be drinking it (kegging and force carbing) 6/11.

anyone with a PROVEN recipe that i can turn this fast, please share.

ill have a keg of my HMF-IPA and a Dopplebock. both of which i feel may be a bit much for most of my guest. im looking for a nice tame light (ugh) ale.

thanks in advance...

Go through Biermuncher's recipes he seems to have a lot of quick beers. Or Ed's Haus Pale ale is supposed to be pretty quick as well.

English Bitter- 6 gal assuming 75% efficiency

8 Lbs Maris Otter
4 oz Crystal 77L
4 oz Crystal 45L

1.5 oz EKG 60min (26 IBU's)
1 oz EKG 1min (.8 IBU's)
1 oz EKG dry hop in keg

(Williamette or Fuggle will work fine to)

1318 London III or WLP002 English

Shoot for 1.038og, also ferment a tad warmer 68º for a little quicker results.

5 lb mild ale
1 lb Maris otter
1 lb crystal 60
1 oz northdown hops 60 min
Wyeast London ESB

12 days primary then to keg. Low carb levels are needed for the style. This is my session beer. Very drinkable.

Hefeweizen:
5 lb white wheat
4 lb vienna (or any base malt)
Hallertauer, or pretty much any hops to get to 20ish IBU @ 60 min
Weihenstephan Weizen yeast (Wyeast 3068)

If kegging, this one is great at 2 weeks with a burst carb. But, not everyone likes wheats...

Fat Woody's Mild:
Maris Otter - 7lbs
Crystal 60 - 8oz
Chocolate Malt - 8oz

Mash 155 for 60m

1.5oz Willamette @ 60m for ~20IBU

I use S-04 for this, at 66*F - it's a beast, and drops clear very well and very fast. You'll have a nice tight yeast cake to use afterwards on a big beer, too. ;)

i plan on using this as a base for some dark fruit flavored beers. might possibly cut MO in half and replace with pilxen and change hops to hersbrucker.
