I know my water supply has chloramines in it and I'm sure my beer would improve if I can take it out. I also read that charcoal filters are not effective in removing it. I'm surprised nothing is mentioned in Papazian's books about it. How does one use campden tablets?

I use a pill cutter/crusher from a pharmacy to cut a tablet into quarters. I add a crushed up quarter tab to my mash water before mashing in, and a quarter tab to my sparge water. It's a little more than you actually need, as supposedly one tab can treat 20 gallons. My top up water is bottled water, so I don't use anything in it.

I've done it the same day with no issue, but there's about six hours from water prep to pitching in my case.

I think it takes about 1 whole tab / gallon to really impact the yeast though.
