Anybody out there know at what temperature Brett goes dormant? I've been thinking about doing an experiment where I brew a beer with Brett and ferment in several smaller carboys (probably around five). I then plan to keg a carboy every two months and store each cold so I can do a vertical tasting in about a year. The idea is to see how Brett character changes the beer over time. In order for this to work, though, storing cold has to actually make the Brett go dormant. Does anybody know if this would work?

Could be a fun experiment. Thanks for any help.

60 F.

I recently made a beer with Brett-B (WLP650) as the primary strain. It got cold and the yeast dropped out of suspension part way through the ferment. Room temp was mid 60s, but I measured the wort at just below 60 (sitting on a concrete floor). Warmed it up and off it went.
