Temperature Monitoring Question

I had kinda posted some of this in another thread, but don't want to hijack someones thread. I am soon to be getting my Brewstand from Marcus to put together a single tier propane system. I am looking into my options on temperature readings on the different keggles. Some have pointed out how disappointed they are with their bimetal dial thermometers. I like the digital readouts of the automated controllers, but really do not have intention of going automated anytime soon. I was looking at ways to use a thermocouple, but am getting real confused real quick.

What if I got a couple of these:

Could I use these probes with their compression fitting?

There is a big difference between a thermocouple and a temperature sensor. I don't think Derrin at Brewer's Hardware has any thermocouples. Look for a Love Controller, many use them here and love them.
I offer much more info since I can't access eBay at work, so I can't see your link.
