First time ever seriously missing my gravity

I tried a mulitple-step mashing schedule with the Saison I just finished--I had some trouble getting the temps where I wanted them and ended up with very poor efficiency.

I was able to add some DME and a little extra sugar, and boil down a little harder than normal, to get the gravity to 1.061 (I was shooting for 1.066). I just hope it isn't *too* dry with th the extra sugar, since Saisons are pretty dry to beging with.

Oh well--my charmed straek had to end eventually. I'm sure this will be fine.

This is the first time I've done a three-step mash (dough-in at 104, protein rest at 125, saccrification at 150).
