I'm making an ESB. I have a yeast starter of WLP002. I also collected bottle dregs from Coniston Bluebird bitter. I want to get the nuances of the true English bitter style, but have more of the ESB style dominate.

From the bottle dregs, I created a starter and got it to grow. So I have a 1L yeast starter of WLP002 and maybe ¼- ½ a vial of the dregs. I want to add both to the primary, but thinking the WLP002 will run over the dregs. Options:

1) Add both see what happens
2) Add dregs first for 48 hours, see activity, then add WLP002
3) Add WLP002 to primary, once that slows down, add bottle dregs to secondary and rack over it

Of course this is experimental, curious about any suggestions. Thanks

step up the dregs to a 2-3L starter and pitch first. pitch the wlp002 after a day or so
i did this with a Ginger wheat pitching dregs of wlp550 and a packet wb-06 for your same reasoning i wanted those belgian style esters but not to overpowering
