True but I was wondering why you can't use apple or something. My girlfriend and I go to alot of wineries around where I live. They all say either they put there wine in oak or stainless steel. Which I make my own wine I'm still using glass carboy. But if I could find a small barrel made out of apple wood that was chard like an oak. Would it hurt to try out or is there something in it that would make me sick or spoil the wine.
